Ingredients
  

For the flatbread:

  • 1 pre-made flatbread or pizza crust
  • 1 cup cooked and shredded chicken breast
  • 1 cup low-fat cottage cheese
  • 1 oil spray
  • Salt and pepper to taste

For the toppings:

  • 1 cup cherry tomatoes halved
  • 1 cup lettuce shredded
  • 1/2 cup red onion thinly sliced
  • 1/2 cup parmesan cheese grated

For the turkey bacon:

  • 6 slices turkey bacon

For the dressing:

  • 1/4 cup light mayonnaise
  • 2 tablespoons non-fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions
 

  • In a skillet or oven, cook the turkey bacon until it's crispy. Once done, set aside on a paper towel to drain excess grease.
  • Preheat the oven to pizza setting. (about 450-500º F)
  • Spread the cottage cheese, salt, and pepper over the flatbread.
  • Distribute the shredded chicken evenly over the cottage cheese mixture.
  • Top with your selection of cherry tomatoes, red onion, and parmesan cheese.
  • Arrange the cooked turkey bacon on top of the chicken layer on the flatbread. Spray with oil spray.
  • Place the flatbread in the preheated oven and bake about 10-15 minutes, but keep a close eye on it so it doesn't burn. Remove and top with lettuce pieces.
  • If making the dressing, mix all together in a bowl and spread a thin layer over the top of the finished flatbread. Enjoy!
