Ingredients

Wet
1 large egg
2 tbsp melted butter or coconut oil
2 tbsp milk of choice
2 tbsp granulated sugar of choice
1 tbsp maple syrup
1/2 tsp vanilla extract

Dry
1/4 cup oat flour
1/4 cup vanilla protein powder
1/2 tsp baking powder
2 tbsp chocolate chips

Instructions

  1. In a microwave safe mug, whisk together the egg, melted butter or oil, milk, sugar, maple syrup, and vanilla until smooth.

  2. Add the oat flour, protein powder, and baking powder. Stir until fully combined.

  3. Fold in the chocolate chips.

  4. Microwave for 45 to 60 seconds until just set in the center.

  5. Let rest for 1 minute before serving.
