High Protein Red Velvet Mug Cake

Ingredients

Wet
3 Tbsp milk of choice
1 Tbsp plain Greek yogurt
1 Tbsp maple syrup or coconut sugar
1 Tbsp melted coconut or avocado oil
1 tsp vanilla extract
Optional red food coloring

Dry
3 Tbsp oat flour
2 Tbsp vanilla or unflavored protein powder
1 Tbsp cocoa powder
1/4 tsp baking powder
Pinch of salt

Frosting
2 Tbsp plain Greek yogurt
1 Tbsp light cream cheese
1 tsp maple syrup or monk fruit
Optional mini dark chocolate chips

Instructions

  1. Mix all wet ingredients in a microwave safe mug.

  2. Add dry ingredients and stir until smooth.

  3. Microwave 45 to 60 seconds until just set.

  4. Stir frosting ingredients and spread on top.
