
Cheesy Alfredo Protein Pasta
Ingredients
- 1 cup cottage cheese
- 1 cup milk
- 2 cloves garlic minced
- 1/2 cup parmesan cheese
- 1/2 cup light mozzarella
- 1 tsp arrowroot powder
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz protein pasta
Instructions
- Cook pasta according to package directions. Drain and set aside
- Lightly coat a skillet with oil spray and sauté garlic until fragrant
- Blend cottage cheese until completely smooth
- Add blended cottage cheese to the skillet with the garlic
- Whisk in milk until fully combined
- Stir in parmesan mozzarella arrowroot Italian seasoning salt and pepper
- Cook over medium low heat until the sauce thickens and becomes creamy
- Add cooked pasta and toss for 2 to 3 minutes until coated and glossy
- Serve immediately. Optional garnish with parsley
