Protein Alfredo Pasta

 

Cheesy Alfredo Protein Pasta

Prep Time 5 minutes
Cook Time 15 minutes
Servings 3

Ingredients
  

  • 1 cup cottage cheese
  • 1 cup milk
  • 2 cloves garlic minced
  • 1/2 cup parmesan cheese
  • 1/2 cup light mozzarella
  • 1 tsp arrowroot powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz protein pasta

Instructions
 

  • Cook pasta according to package directions. Drain and set aside
  • Lightly coat a skillet with oil spray and sauté garlic until fragrant
  • Blend cottage cheese until completely smooth
  • Add blended cottage cheese to the skillet with the garlic
  • Whisk in milk until fully combined
  • Stir in parmesan mozzarella arrowroot Italian seasoning salt and pepper
  • Cook over medium low heat until the sauce thickens and becomes creamy
  • Add cooked pasta and toss for 2 to 3 minutes until coated and glossy
  • Serve immediately. Optional garnish with parsley
