Ingredients

0 of 12 gathered
CAKE
3 tbsp oat flour
1 tbsp vanilla protein powder
1 tbsp nonfat Greek yogurt
1 tbsp maple syrup
1 tbsp milk
1/4 tsp baking powder
1/2 tsp vanilla extract
1 pinch salt
CINNAMON SWIRL
1 tsp maple syrup
1/2 tsp ground cinnamon
FOR THE TOP
1 tbsp maple syrup, warmed
1 tbsp nonfat Greek yogurt (optional, for the glaze)

Method

1
Stir the oat flour, protein powder, Greek yogurt, maple syrup, milk, baking powder, vanilla, and salt in a microwave-safe mug until smooth with no dry flour left.
2
Stir the cinnamon and 1 tsp maple syrup together, then swirl it through the batter with a spoon so it ribbons through the cake.
3
Microwave for 45 to 60 seconds, until the top is just set and springs back. Start at 45 seconds and add short bursts so it does not dry out.
4
Warm the last tablespoon of maple syrup and pour it over the top. Add the Greek yogurt glaze if you want it, and eat straight from the mug.

Questions People Ask

Why is my protein mug cake rubbery?
It cooked too long. Microwave power varies, so start at 45 seconds and add time in short bursts, pulling it the second the top is set and springy.
Can I make this without protein powder?
You can, but it is what gives the cake its protein and its cake-batter flavor. Without it the cake still works, just lighter on protein.

Storage

Best eaten fresh and warm straight from the mug. Nutrition is an estimate from standard ingredients and shifts with your protein powder and milk, so run it through a macro calculator with your exact products.
