Ingredients
For the graham crust
1/2 cup graham cracker crumbs (about 4 full sheets)
2 tbsp butter, melted
1/2 tsp cinnamon
For the cheesecake base
1 cup low-fat cottage cheese
4 oz light cream cheese, softened
1 scoop (about 1/3 cup) vanilla whey protein powder
1 egg
3 tbsp powdered monk fruit sweetener
1 tsp vanilla extract
Pinch of salt
For the cinnamon sugar apples
1 large apple, peeled and finely diced
2 tbsp coconut sugar (or brown sugar)
1 tsp cinnamon
1 tsp cornstarch
2 tbsp water
Method
Crust
2
Preheat the oven to 325°F. Grease or line a 12-cup mini muffin tray, or set out a silicone cube tray.
3
Stir the graham cracker crumbs, melted butter, and cinnamon together until it looks like wet sand. Press about 1 tsp firmly into the bottom of each cup.
Cheesecake base
5
Blend the cottage cheese by itself for 60 full seconds until completely smooth. Do not skip this, grainy cottage cheese makes grainy bites.
6
Add the cream cheese, protein powder, egg, monk fruit, vanilla, and salt. Blend until creamy and fully combined.
7
Spoon the batter over each crust, filling almost to the top.
8
Bake for 15 to 18 minutes, until the centers are just set with a slight jiggle. Cool, then chill in the fridge for at least 1 hour.
Cinnamon sugar apples
10
While the bites chill, add the diced apple, coconut sugar, cinnamon, cornstarch, and water to a small pan over medium heat.
11
Cook for 4 to 5 minutes, stirring, until the apples soften and the syrup thickens. Let cool slightly.
12
Spoon the warm apples over each chilled cheesecake bite right before serving.

Questions People Ask
Can I make these no-bake?
Yes. Skip the egg, fold in 1 tsp gelatin bloomed in 1 tbsp warm water, and freeze the bites for 2 hours instead of baking. They become more of a frozen cheesecake bite.
What tray should I use?
A 12-cup mini muffin tray or a silicone cube tray both work great. Silicone pops them out the cleanest.
How far ahead can I make them?
The plain bites keep 4 days in the fridge. Add the warm apples right before serving so the crust stays set.
Storage
Store the plain bites in an airtight container in the fridge up to 4 days, and keep the apple topping separate, warming it just before serving. The bites (without topping) freeze up to 3 weeks.
