In a bowl or a mason jar, combine the rolled oats, milk, applesauce, maple syrup or honey, cinnamon, nutmeg, vanilla extract, and a pinch of salt. Stir well until all the ingredients are thoroughly combined.
Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Allow the oats to soak and soften overnight or for at least 4-6 hours.
The next morning, take the oats out of the fridge. Stir the mixture and check the consistency; if it's too thick, you can add a splash of milk to adjust. Top the oats with chopped fresh apples, nuts, or granola for some extra crunch and flavor.
