In a small saucepan, combine soy sauce, brown sugar, honey, rice vinegar, garlic, and ginger over medium heat. Stir until the sugar dissolves.
In a separate bowl, mix water and cornstarch until dissolved. Add this mixture to the saucepan and continue stirring until the sauce thickens. Once thickened, remove from heat and set aside.
For The Tofu
Preheat your air fryer to 400°F (200°C).
In a bowl, lightly coat tofu cubes with cornstarch.
Place tofu in a single layer in the air fryer basket. Spray or brush with cooking spray or oil.
Air fry for 15-20 minutes, flipping halfway through, until the tofu is crispy and golden.
Assembly
Once done, remove the tofu from the air fryer and place it in a mixing bowl.
Pour the prepared homemade teriyaki sauce over the crispy tofu cubes. Gently toss until the tofu is evenly coated.
Serve the crispy teriyaki tofu garnished with sesame seeds and chopped green onions.
