Ingredients
  

  • ripe banana
  • 1 cup oat flour you can blend oats to make your own
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon optional
  • Pinch of salt
  • Cooking spray or oil for waffle iron

Instructions
 

  • Preheat Waffle Iron: Heat your waffle iron according to manufacturer instructions.
  • Prepare Batter: In a mixing bowl, mash the ripe banana until smooth. Add the eggs and whisk together until well combined.
  • Combine Dry Ingredients: In a separate bowl, mix the oat flour, baking powder, cinnamon (if using), and a pinch of salt.
  • Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the banana and egg mixture until just combined. Be careful not to overmix; a few lumps are okay.
  • Cook Waffles: Lightly coat the waffle iron with cooking spray or oil. Pour an appropriate amount of batter into the preheated waffle iron and cook according to the iron's instructions or until golden and cooked through.
  • Serve: Serve the waffles warm with your choice of toppings such as fresh fruit, a drizzle of honey or maple syrup, yogurt, or nuts.

Notes

The oat flour can be subbed for any other type of flour if needed!
