1cupShredded Mozzarella
2tbspGrated Parmesan
1tspGarlic Salt
Fresh Basil or Parsleyto garnish
Red Pepper Flakesoptional
Instructions
Preheat oven to 450 F. Line a baking sheet with parchment and spray lightly with cooking spray.
Mix flour and Greek yogurt together until a dough forms. Knead 1-2 minutes until smooth. If sticky add a little extra flour.
On a floured surface roll the dough into a round or rectangle about 1/4 inch thick. Transfer to your baking sheet.
Par-bake the crust for 8 minutes until just set and lightly golden on the edges.
Make the Alfredo sauce: combine cottage cheese, cream cheese, parmesan and garlic in a small saucepan over low heat. Stir until smooth and warmed through. Season with salt and pepper.
Spread Alfredo sauce evenly over the par-baked crust leaving a small border around the edge.
Top with your chicken shredded mozzarella and grated parmesan.
Bake for 10-12 minutes until cheese is melted bubbly and golden.
Remove from oven. Sprinkle with garlic salt fresh basil and red pepper flakes. Slice and serve hot.
Notes
Use any clean chicken you love. No self-rising flour? DIY it: 1 cup AP flour plus 1.5 tsp baking powder plus 1/4 tsp salt.
