In a food processor or blender, combine the cottage cheese, olive oil, minced garlic, salt, and pepper.
Blend until the mixture becomes smooth and creamy. Set aside.
Preheat your oven to the temperature recommended on the flatbread packaging.
Place the store-bought flatbreads on a baking sheet.
Evenly spread the whipped cottage cheese mixture over the flatbreads.
Arrange the thinly sliced heirloom tomatoes on top of the whipped cottage cheese.
Place the baking sheet with the topped flatbreads in the preheated oven.
Bake according to the flatbread package instructions or until the edges of the flatbreads are golden and crisp.
Once out of the oven, sprinkle the torn or thinly sliced fresh basil leaves over the hot flatbreads.
Slice the flatbreads into portions and serve warm. Add salt as needed!
