Ingredients

FOR THE FILLING
1 cup low-fat cottage cheese
4 oz light cream cheese, softened
3/4 cup nonfat plain Greek yogurt
2 scoops vanilla whey protein powder
3 tbsp powdered monk fruit sweetener
1 tsp vanilla extract
1 pinch salt
FOR THE CHOCOLATE SHELL
1 cup dark chocolate chips
1 tsp coconut oil
Flaky sea salt, to top
EQUIPMENT
Silicone cube mold tray (about 12 cavities)

Method

1
Blend the cottage cheese by itself for a full 60 seconds until completely smooth. Do not rush this, grainy bites come from under-blended cottage cheese.
2
Add the blended cottage cheese, cream cheese, Greek yogurt, protein powder, monk fruit, vanilla, and salt to a bowl. Beat with a hand mixer until creamy and fully combined, about 2 minutes.
3
Spoon the filling into a silicone cube mold tray, filling each cavity level with the top. Tap the tray on the counter a few times to knock out air bubbles.
4
Freeze until completely solid, at least 4 hours or overnight.
5
Pop the frozen cubes out of the silicone mold and return them to the freezer while you melt the chocolate.
6
Melt the chocolate chips and coconut oil in a deep, narrow bowl in 30-second microwave bursts, stirring between each, until smooth.
7
Dip each frozen cube, let the excess drip off, set it on a parchment-lined sheet, and top with flaky sea salt right away before the shell sets.
8
Freeze 15 minutes to fully set the shell, then store in an airtight container in the freezer.

Questions People Ask

Do I need a silicone mold?
It is the easiest way, since the flexible tray pops the frozen bites out clean. A rigid mold or ice cube tray works too, just run warm water over the bottom to release them, or freeze the filling in a lined pan and cut it into cubes.
Why are my bites grainy?
The cottage cheese was not blended enough. Blend it alone for a full 60 seconds until totally smooth before adding anything else.

Storage

Keep in an airtight container in the freezer for up to 3 weeks. Let a bite sit for a minute before eating so the shell cracks instead of shatters. Nutrition is an estimate from standard ingredients and shifts with your protein powder and chocolate, so run it through a macro calculator with your exact products.
