Ingredients
For the strawberry cake base
3 tbsp oat flour
1/2 scoop vanilla whey protein powder (about 2 tbsp)
1 tbsp crushed freeze-dried strawberries (4 to 5 berries, crushed to a powder)
1/4 tsp baking powder
Pinch of salt
1 tbsp nonfat Greek yogurt
2 tbsp milk
1 tbsp maple syrup
1/4 tsp vanilla extract
2 tbsp finely diced fresh strawberries
For the strawberry Greek yogurt topping
1/3 cup nonfat Greek yogurt
2 strawberries, mashed with a fork
1 tsp honey or maple syrup
For the top
Extra diced strawberries or a pinch of freeze-dried strawberry crumbs
Method
Make the topping first
2
Mash the strawberries with the honey, stir them through the Greek yogurt so it goes pink and streaky, and park it in the fridge. Cold topping on warm cake is the whole experience.
Mix the strawberry cake
4
In a microwave-safe mug, stir the oat flour, protein powder, crushed freeze-dried strawberries, baking powder, and salt.
5
Add the Greek yogurt, milk, maple syrup, and vanilla and stir until smooth and pink. Fold in the diced strawberries.
Cook and top
7
Microwave for 60 to 70 seconds, until the top springs back when you press it. Don't overcook it; protein powder dries out fast.
8
Let it sit for 1 minute, spoon the cold strawberry yogurt over the warm cake, and finish with extra diced strawberries or a pinch of freeze-dried crumbs.

Questions People Ask
No freeze-dried strawberries?
Swap in 1 tbsp of reduced-sugar strawberry jam and cut the milk back to 1 tbsp. The cake will be a little denser and less pink, but still tastes like strawberry.
Can I use strawberry protein powder instead?
Yes, and it doubles down on the berry flavor. Keep the freeze-dried strawberries anyway; that's where the real fruit taste comes from.
Can I use store-bought strawberry yogurt for the topping?
You can, but most flavored yogurts trade protein for sugar. Mashing fresh berries into plain nonfat Greek yogurt keeps the topping at 8 grams of protein and you control the sweetness.
Storage
Best eaten fresh and warm, topping cold from the fridge. Nutrition is an estimate from standard ingredients (about 315 calories and 26g protein for the full mug) and shifts with your protein powder and yogurt, so run your exact brands through a macro calculator if you're tracking closely.
