Ingredients

Apple pie filling
2 medium apples, peeled and diced small
1 tablespoon pure maple syrup
1 teaspoon cinnamon
1 teaspoon cornstarch
Pinch of salt
Blondie batter
Choose one flour option.
Oat flour option
1 cup blanched almond flour
½ cup oat flour
All purpose flour option
1 ¼ cups all purpose flour
2 tablespoons butter, melted
For either option
½ cup vanilla protein powder, about 2 scoops
½ teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt
2 large eggs
⅓ cup creamy almond butter
½ cup plain Greek yogurt
¼ cup pure maple syrup
3 tablespoons coconut sugar or light brown sugar
1 teaspoon vanilla extract
1 to 2 tablespoons milk, only if needed
Cinnamon sugar top
1 tablespoon coconut sugar or light brown sugar
½ teaspoon cinnamon

Method

1
Heat the oven to 350°F. Line an 8 inch square metal pan with parchment and lightly grease it.
2
Add the apples, maple syrup, cinnamon, cornstarch, and salt to a skillet over medium heat. Cook for 6 to 8 minutes until the apples are tender and their juices form a thick, glossy coating. Cool for 10 minutes.
3
Whisk together your chosen flour option, protein powder, baking powder, cinnamon, and salt.
4
In another bowl, whisk the eggs, almond butter, Greek yogurt, maple syrup, coconut sugar, and vanilla. For the all purpose flour version, whisk in the melted butter.
5
Fold the wet mixture into the dry mixture. The batter should be thick, glossy, and spreadable. Add milk 1 tablespoon at a time only if needed.
6
Reserve about ¾ cup of batter. Spread the remaining batter in the pan.
7
Spoon the apple filling over the batter, leaving a small border. Dollop the reserved batter over the apples and gently swirl it through the filling.
8
Mix the coconut sugar and cinnamon, then sprinkle it over the top.
9
Bake for 28 to 34 minutes. The edges should be deeply golden and the center should look set but remain slightly soft when pressed.
10
Cool completely for about 1 hour before slicing. The center becomes dense and chewy as it cools.
