Bananas Foster Waffles

Ingredients
  

  • 2 ripe banana
  • 1 cup oat flour you can blend oats to make your own
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 tablespoon coconut oil or butter alternative
  • 1 tablespoon brown sugar
  • 1/2 cup maple syrup or honey
  • 1/4 cup chopped walnuts or pecans optional
  • Cooking spray or oil for waffle iron

Instructions
 

  • Preheat Waffle Iron: Heat your waffle iron according to manufacturer instructions.
  • Prepare Batter: In a mixing bowl, mash the ripe banana until smooth. Add the eggs and whisk together until well combined.
  • Combine Dry Ingredients: In a separate bowl, mix the oat flour, baking powder, cinnamon, and a pinch of salt.
  • Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the banana and egg mixture until just combined.
  • Cook Waffles: Lightly coat the waffle iron with cooking spray or oil. Pour an appropriate amount of batter into the preheated waffle iron and cook according to the iron's instructions or until golden and cooked through.
  • Prepare Bananas Foster Topping: In a small pan over medium heat, melt the coconut oil (or butter) and brown sugar. Add the maple syrup (or honey) and stir until combined. Slice the remaining banana and add it to the pan. Cook for 2-3 minutes, stirring gently until the bananas are coated and slightly caramelized. Add chopped nuts if desired and cook for an additional minute.
  • Serve: Place the cooked waffles on a plate and top with the Bananas Foster mixture. Optionally, sprinkle more chopped nuts on top for extra crunch and flavor.
