Preheat your air fryer to 375°F (190°C). In a bowl, mix the flour, milk, garlic powder, salt, and pepper until you have a smooth batter.
Dip each cauliflower floret into the batter, ensuring it's fully coated, and place them in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer.
Cook the cauliflower for about 15-18 minutes, flipping them halfway through, until they're golden brown and crispy. Adjust the cooking time based on your air fryer's settings for the desired crispiness.
While the cauliflower is cooking, mix the buffalo sauce, melted butter (or olive oil), and honey (or maple syrup) in a bowl.
Once the cauliflower is done, transfer it to a large mixing bowl. Pour the prepared buffalo sauce mixture over the cauliflower and toss until each piece is evenly coated.
Garnish with chopped green onions and serve hot with a side of ranch or blue cheese dressing for dipping.
