Cook pasta according to package directions. Drain and set aside
Lightly coat a skillet with oil spray and sauté garlic until fragrant
Blend cottage cheese until completely smooth
Add blended cottage cheese to the skillet with the garlic
Whisk in milk until fully combined
Stir in parmesan mozzarella arrowroot Italian seasoning salt and pepper
Cook over medium low heat until the sauce thickens and becomes creamy
Add cooked pasta and toss for 2 to 3 minutes until coated and glossy
Serve immediately. Optional garnish with parsley
