Protein Frosted Animal Cracker Ice Cream

Ingredients
Base:
- 1 cup Fairlife 2% milk
- 1 scoop vanilla protein powder
- 1/4 cup low fat cottage cheese
- 1 tbsp honey
- 1 tsp vanilla extract
- Pinch of salt
Mix-In:
- 1 oz frosted animal crackers (about 10-12 crackers)
Instructions
- Add all base ingredients to a blender. Blend until completely smooth, about 45 seconds. No lumps.
- Pour into your Ninja Creami pint container. Fill to the max fill line. Add a splash more milk if needed. Seal and freeze flat for a minimum of 24 hours.
- Remove from freezer. Let sit on the counter for 5 minutes. Process on the Lite Ice Cream setting.
- If the texture is crumbly after the first spin, add a splash of Fairlife milk and re-spin.
- Create a well down the center of the pint, stopping about 1 inch from the bottom. Add the frosted animal crackers. Run the Mix-In setting.
- Serve immediately.
Notes
- Whey isolate only. Casein and blends will cause a gummy texture.
- Make sure the cottage cheese is fully blended smooth before freezing or you will get chunks.
- Frosted animal crackers get soft fast. Eat immediately or store crackers separately and add fresh each time.
