High Protein Banana Bread Granola

Ingredients
  

  • 2 ripe bananas, mashed
  • 2–3 tbsp maple syrup
  • 1/4 cup melted coconut oil (or olive oil)
  • 1 tsp vanilla extract
  • 3 cups rolled oats
  • 1 cup chopped pecans (optional)
  • 1/2 cup vanilla protein powder
  • 2 tbsp chia seeds
  • 2 tsp cinnamon
  • Pinch of salt
  • Optional after baking
  • Banana chips
  • Nuts/Seeds
  • Chocolate chunks

Instructions
 

  • Preheat oven to 300°F and line a large baking sheet with parchment paper.
  • In a large bowl, mix mashed bananas, maple syrup, coconut oil, and vanilla.
  • Add oats, pecans, protein powder, chia seeds, cinnamon, and salt. Stir until fully coated.
  • Spread evenly on the baking sheet.
  • Bake 20 minutes, stir, then bake another 20–25 minutes until golden and dry.
  • Turn off the oven, crack the door, and let granola sit inside 20–30 minutes to crisp.
  • Cool completely and store in an airtight container.
