Protein Chicken Alfredo Pizza

Ingredients
The Crust
- 1 cup Self-Rising Flour
- 1 cup Non-Fat Plain Greek Yogurt
The Protein Alfredo Sauce
- 1/2 cup Whipped Cottage Cheese
- 2 tbsp Light Cream Cheese softened
- 1/4 cup Grated Parmesan
- 2 cloves Garlic minced or 1/2 tsp garlic powder
- Salt and Black Pepper to taste
The Toppings
- 1 cup Cooked Chicken grilled breast or clean breaded chicken of choice sliced
- 1 cup Shredded Mozzarella
- 2 tbsp Grated Parmesan
- 1 tsp Garlic Salt
- Fresh Basil or Parsley to garnish
- Red Pepper Flakes optional
Instructions
- Preheat oven to 450 F. Line a baking sheet with parchment and spray lightly with cooking spray.
- Mix flour and Greek yogurt together until a dough forms. Knead 1-2 minutes until smooth. If sticky add a little extra flour.
- On a floured surface roll the dough into a round or rectangle about 1/4 inch thick. Transfer to your baking sheet.
- Par-bake the crust for 8 minutes until just set and lightly golden on the edges.
- Make the Alfredo sauce: combine cottage cheese, cream cheese, parmesan and garlic in a small saucepan over low heat. Stir until smooth and warmed through. Season with salt and pepper.
- Spread Alfredo sauce evenly over the par-baked crust leaving a small border around the edge.
- Top with your chicken shredded mozzarella and grated parmesan.
- Bake for 10-12 minutes until cheese is melted bubbly and golden.
- Remove from oven. Sprinkle with garlic salt fresh basil and red pepper flakes. Slice and serve hot.
Notes
Use any clean chicken you love. No self-rising flour? DIY it: 1 cup AP flour plus 1.5 tsp baking powder plus 1/4 tsp salt.
