Protein Banana Bread Waffles

Ingredients
  

  • 1 ripe banana, mashed
  • 1 scoop (30g) Vanilla or Snickerdoodle protein powder
  • 1/2 cup oat flour (or blended oats)
  • 1 large egg
  • 1/4 cup egg whites
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • Optional: 1 tbsp mini chocolate chips or crushed nuts.

Instructions
 

  • Preheat your waffle iron and spray with non-stick spray.
  • In a bowl, mash the banana until smooth. Whisk in the egg and egg whites.
  • Add the protein powder, oat flour, cinnamon, baking powder, and salt. Mix until just combined.
  • Pour onto the hot waffle iron and cook for 3-5 minutes until golden and crisp.
  • Top with a drizzle of maple syrup, nuts, bananas and/or peanut butter.
