Protein Chocolate Lava Cake

Ingredients
  

  • 3 tbsp oat flour
  • 2 tbsp chocolate protein powder
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp coconut sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/4 cup milk
  • 1 tbsp nonfat Greek yogurt
  • About 1 tsp chopped dark chocolate or 1 small square 70% cacao

Instructions
 

  • Preheat oven to 375°F. Lightly grease a small ramekin.
  • In a mixing bowl, whisk together oat flour, protein powder, cocoa powder, coconut sugar, baking powder, and salt until evenly combined.
  • Add milk and Greek yogurt. Stir until a thick, smooth batter forms.
  • Pour half of the batter into the prepared ramekin.
  • Place the dark chocolate in the center, pressing it gently into the batter.
  • Cover with remaining batter, fully sealing the chocolate inside.
  • Bake for 9 minutes, until the edges are set and the center remains soft.
  • Let rest for 1 minute before serving warm.
