Snowball Protein Bites

Ingredients
  

  • 1 1/2 cups oat flour
  • 1/2 cup protein powder
  • 1/2 cup almond flour
  • 1/2 cup any nut butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut for coating

Instructions
 

  • epare Dry Ingredients: In a mixing bowl, combine the oat flour, protein powder, and almond flour. Ensure they are thoroughly mixed.
  • Blend Wet Ingredients: Add the nut butter, honey or maple syrup, and vanilla extract to the dry ingredients. Mix until a cohesive dough forms. Adjust consistency by adding more nut butter or sweetener if needed for better binding.
  • Shape into Balls: Take small portions of the mixture and roll them into bite-sized balls using the palms of your hands.
  • Coat with Coconut: Spread the shredded coconut on a plate. Roll each ball in the coconut until uniformly coated. If the coconut doesn't stick well, consider adding more sweetener to the bites for better adherence.
  • Chill: Place the coated balls on a baking sheet lined with parchment paper and chill them in the refrigerator for approximately 30 minutes to set.
  • Serve: Once firm, these snowball bites are ready! For prolonged freshness, store them in an airtight container in the fridge.
