Ingredients
- 1 1/2 cups oat flour
- 1/2 cup protein powder
- 1/2 cup almond flour
- 1/2 cup any nut butter
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut for coating
Instructions
- epare Dry Ingredients: In a mixing bowl, combine the oat flour, protein powder, and almond flour. Ensure they are thoroughly mixed.
- Blend Wet Ingredients: Add the nut butter, honey or maple syrup, and vanilla extract to the dry ingredients. Mix until a cohesive dough forms. Adjust consistency by adding more nut butter or sweetener if needed for better binding.
- Shape into Balls: Take small portions of the mixture and roll them into bite-sized balls using the palms of your hands.
- Coat with Coconut: Spread the shredded coconut on a plate. Roll each ball in the coconut until uniformly coated. If the coconut doesn't stick well, consider adding more sweetener to the bites for better adherence.
- Chill: Place the coated balls on a baking sheet lined with parchment paper and chill them in the refrigerator for approximately 30 minutes to set.
- Serve: Once firm, these snowball bites are ready! For prolonged freshness, store them in an airtight container in the fridge.
