Protein White Mac and Cheese

Ingredients
  

  • cups high protein pasta, dry1 cup low fat cottage cheese1 cup milk1 cup part skim mozzarella shredded1 half cup parmesan freshly grated1 tablespoon butter or olive oil1 teaspoon garlic powder1/2 teaspoon onion powderSalt and pepper to taste
  • Optional:1 scoop unflavored protein powder1 teaspoon Dijon mustardPinch of nutmeg

Instructions
 

  • Cook pasta according to package directions. Reserve one quarter cup pasta water then drain.
  • Blend cottage cheese and milk until completely smooth.
  • In a saucepan over medium low heat melt butter or oil.
  • Add blended sauce and heat gently stirring often.
  • Stir in mozzarella, parmesan, garlic powder, onion powder, salt and pepper until smooth and creamy.
  • Add cooked pasta and loosen with reserved pasta water as needed.
  • Optional whisk in protein powder until fully incorporated.
  • Serve hot and with cheese on top if desired!
