
Lemon Pepper Potatoes
Ingredients
- 1 pound fingerling potatoes washed and dried
- 2 tablespoons olive oil
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1 teaspoon freshly ground black pepper
- 1 teaspoon sea salt adjust to taste
- 2 cloves garlic minced
- 1 tablespoon fresh parsley chopped (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: In a large bowl, toss the fingerling potatoes with olive oil, lemon zest, lemon juice, black pepper, salt, and minced garlic until the potatoes are evenly coated.
- Arrange Potatoes: Place the seasoned potatoes on a baking sheet lined with parchment paper or aluminum foil, ensuring they are in a single layer. This allows them to roast evenly.
- Roast Potatoes: Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are tender and golden brown. You can toss them once halfway through the cooking time for even browning.
- Garnish and Serve: Once done, remove the potatoes from the oven and transfer them to a serving dish. Sprinkle with fresh chopped parsley for a pop of color and added freshness if desired. Serve hot and enjoy!
