Blueberry Waffles & Tangy Lemon Compote!
The Breakfast of Champs! A combo of delicious waffles with the vibrant flavors of blueberries and a zesty touch of lemon. These waffles are the perfect morning or brunch treat for the whole family!

Why Blueberry Waffles?
Blueberries, are packed with antioxidants and nutrients. Combining them with one of my comfort foods (aka waffles) creates a delightful fusion—one that’s both nutritious and indulgent. The lemon blueberry compote adds a refreshing tang that elevates the dish to a whole new level!
Tips & Tricks for Perfect Waffles:
- Mixing the Batter: When combining wet and dry ingredients for the waffle batter, remember not to overmix. It’s alright if there are a few lumps left; overmixing may result in tough waffles.
- Cooking Waffles: Preheat your waffle iron properly and follow the manufacturer’s instructions for the ideal cooking time. Use cooking spray or lightly brush the iron with oil to prevent sticking.
- Keep Them Warm: If making a batch, keep the cooked waffles warm in a 200°F (93°C) oven while you finish cooking the rest. This helps maintain their crispiness.
Perfecting the Lemon Blueberry Compote:
- Sweetness & Tartness: Adjust the sweetness and tartness of the compote according to your preference. Some may prefer a slightly sweeter compote, while others might enjoy the tanginess of more lemon juice.
- Consistency: The compote thickens as it cools. If you prefer a thicker consistency, let it simmer a bit longer on the stove. Remember, it will continue to thicken upon standing.
Serving Suggestions:
These waffles are incredibly versatile when it comes to serving:
- Breakfast Bliss: Drizzle the warm Lemon Blueberry Compote generously over a freshly made waffle and top it off with a dollop of Greek yogurt or a sprinkle of granola for added texture.
- Brunch Extravaganza: Serve these waffles with a side of crispy bacon or sausage links and a fresh fruit salad to create a wholesome brunch spread that’ll impress everyone at the table.
Meal Prepping with Blueberry Waffles:
- Freezing Waffles: These waffles freeze exceptionally well! Once cooled, stack them with parchment paper in between, place in a freezer bag, and freeze for up to 2-3 months. Reheat in a toaster or oven for a quick, on-the-go breakfast.
- Prepping the Compote: The Lemon Blueberry Compote can be made ahead and stored in the refrigerator for up to a week. Reheat gently on the stove or in the microwave before serving.

Blueberry Waffles with Lemon Blueberry Compote
Ingredients
For the Waffles:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons sugar or preferred sweetener
- 1 cup milk dairy or plant-based
- 2 eggs
- 1/4 cup melted butter or oil
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
For the Lemon Blueberry Compote:
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup water
- 2-3 tablespoons honey or maple syrup adjust to taste
- 1 lemon zest and juice
- 1/2 teaspoon vanilla extract
Instructions
For the Waffles:
- Preheat your waffle iron.
- Combine dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- Prepare wet ingredients: In another bowl, whisk together the milk, eggs, melted butter or oil, and vanilla extract.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; some lumps are okay. Gently fold in the blueberries.
- Cook waffles: Lightly grease the waffle iron if needed. Pour an appropriate amount of batter onto the preheated waffle iron and cook according to your waffle maker's instructions until golden brown. Repeat with the remaining batter.
For the Lemon Blueberry Compote:
- Cook blueberries: In a saucepan over medium heat, combine the blueberries, water, honey or maple syrup, lemon zest, and lemon juice. Stir gently to combine.
- Simmer: Bring the mixture to a simmer, stirring occasionally. Let it cook for about 8-10 minutes, or until the blueberries have burst and the mixture has thickened slightly.
- Add vanilla: Remove the saucepan from heat and stir in the vanilla extract. Adjust sweetness or tartness by adding more sweetener or lemon juice if desired.
Serve:
- Place a waffle on a plate and spoon some of the warm Lemon Blueberry Compote over the top. Optionally, garnish with fresh blueberries, a drizzle of honey or maple syrup, and a dollop of yogurt or whipped cream.
