
Protein Cinnamon Roll Baked Oats
Ingredients
- 1/2 cup rolled oats
- 3/4 cup milk of choice
- 1/2 tsp vanilla extract
- 2 tbsp nut butter
- 1/2 tsp baking powder
- 1 scoop vanilla protein powder
- 1.5 tbsp coconut sugar (optional)
- 1 tsp cinnamon
- Cinnamon Swirl
- 1 tbsp nut butter
- 1 tsp maple syrup
- 1/4 tsp cinnamon
- Greek Yogurt Frosting
- 2 tbsp Greek yogurt
- 1 tsp maple syrup
Instructions
- Preheat oven to 350°F.
- Blend oats, milk, vanilla, nut butter, baking powder, protein powder, coconut sugar, cinnamon. Let batter rest for 5 minutes. If it appears too thin, add ¼ cup more oats and blend.
- Pour batter into a greased ramekin.
- In a small bowl, mix swirl ingredients. Spoon on top of batter and use a knife to gently swirl.
- Bake 25 minutes, until set and golden.
- Whisk frosting ingredients until smooth.
- Spread over baked oats once slightly cooled and dust with extra cinnamon or drizzle of maple syrup before serving.
