
Hot Honey Chicken Sandwiches

- pounds boneless skinless chicken thighs
- ½ cup plain Greek yogurt
- teaspoon garlic powder
- teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- Crispy Coating
- ¾ cup panko breadcrumbs
- ¼ cup grated parmesan
- ½ teaspoon chili powder
- Hot Honey Sauce
- cup honey
- tablespoon hot sauce
- ½ teaspoon red pepper flakes
- Pinch salt
- High Protein Slaw
- cups shredded cabbage
- ½ cup plain Greek yogurt
- teaspoon apple cider vinegar
- Pinch salt
- To Assemble
- high protein or whole wheat buns
- Pickle slices
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment and place a wire rack on top.
- In a bowl mix Greek yogurt garlic powder smoked paprika salt and pepper. Coat chicken thighs evenly.
- In another bowl combine panko parmesan and chili powder. Press chicken into mixture until fully coated.
- Place on wire rack and lightly spray with olive oil spray. Bake 22 to 28 minutes until golden and internal temperature reaches 165°F.
- While chicken bakes warm honey hot sauce red pepper flakes and salt in a small saucepan until smooth.
- Mix cabbage Greek yogurt vinegar and salt for the slaw. Chill until ready to use.
- Toast buns. Brush hot honey over the baked chicken. Add slaw and pickles. Drizzle extra hot honey if desired.
