Chicken Club Flatbread

Ingredients
For the flatbread:
- 1 pre-made flatbread or pizza crust
- 1 cup cooked and shredded chicken breast
- 1 cup low-fat cottage cheese
- 1 oil spray
- Salt and pepper to taste
For the toppings:
- 1 cup cherry tomatoes halved
- 1 cup lettuce shredded
- 1/2 cup red onion thinly sliced
- 1/2 cup parmesan cheese grated
For the turkey bacon:
- 6 slices turkey bacon
For the dressing:
- 1/4 cup light mayonnaise
- 2 tablespoons non-fat Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a skillet or oven, cook the turkey bacon until it's crispy. Once done, set aside on a paper towel to drain excess grease.
- Preheat the oven to pizza setting. (about 450-500º F)
- Spread the cottage cheese, salt, and pepper over the flatbread.
- Distribute the shredded chicken evenly over the cottage cheese mixture.
- Top with your selection of cherry tomatoes, red onion, and parmesan cheese.
- Arrange the cooked turkey bacon on top of the chicken layer on the flatbread. Spray with oil spray.
- Place the flatbread in the preheated oven and bake about 10-15 minutes, but keep a close eye on it so it doesn't burn. Remove and top with lettuce pieces.
- If making the dressing, mix all together in a bowl and spread a thin layer over the top of the finished flatbread. Enjoy!
