High Protein Banana Bread

Ingredients
- 1 1/2 cups oat flour
- 1/2 cup protein powder
- 1 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp cinnamon
- 1 1/2 cups mashed overripe banana about 3 to 4 bananas
- 1/2 cup yogurt
- 1/2 cup maple syrup honey or agave
- 1/3 cup oil or water
- 2 tsp vanilla extract
- Optional chocolate chips or nuts
Instructions
- Preheat oven to 350°F and line or lightly grease a loaf pan.
- In a large bowl whisk together flour protein powder baking soda baking powder salt and cinnamon.
- In another bowl mix mashed banana yogurt maple syrup oil and vanilla until smooth.
- Add wet ingredients to dry and stir just until combined. Do not overmix.
- Fold in any mix ins if using.
- Pour into loaf pan and smooth the top.
- Bake 45 to 55 minutes until a toothpick comes out mostly clean.
