Ingredients

  • 1 1/2 cups oat flour
  • 1/2 cup protein powder
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/2 cups mashed overripe banana about 3 to 4 bananas
  • 1/2 cup yogurt
  • 1/2 cup maple syrup honey or agave
  • 1/3 cup oil or water
  • 2 tsp vanilla extract
  • Optional chocolate chips or nuts

Instructions

  • Preheat oven to 350°F and line or lightly grease a loaf pan.
  • In a large bowl whisk together flour protein powder baking soda baking powder salt and cinnamon.
  • In another bowl mix mashed banana yogurt maple syrup oil and vanilla until smooth.
  • Add wet ingredients to dry and stir just until combined. Do not overmix.
  • Fold in any mix ins if using.
  • Pour into loaf pan and smooth the top.
  • Bake 45 to 55 minutes until a toothpick comes out mostly clean.
