High Protein Banana Bread Granola
Ingredients
2 ripe bananas, mashed
2–3 tbsp maple syrup
1/4 cup melted coconut oil (or olive oil)
1 tsp vanilla extract
3 cups rolled oats
1 cup chopped pecans (optional)
1/2 cup vanilla protein powder
2 tbsp chia seeds
2 tsp cinnamon
Pinch of salt
Optional after baking
Banana chips
Nuts/Seeds
Chocolate chunks
Instructions
- Preheat oven to 300°F and line a large baking sheet with parchment paper.
- In a large bowl, mix mashed bananas, maple syrup, coconut oil, and vanilla.
- Add oats, pecans, protein powder, chia seeds, cinnamon, and salt. Stir until fully coated.
- Spread evenly on the baking sheet.
- Bake 20 minutes, stir, then bake another 20–25 minutes until golden and dry.
- Turn off the oven, crack the door, and let granola sit inside 20–30 minutes to crisp.
- Cool completely and store in an airtight container.
