High Protein Banana Bread Granola

Ingredients
2 ripe bananas, mashed
2–3 tbsp maple syrup
1/4 cup melted coconut oil (or olive oil)
1 tsp vanilla extract
3 cups rolled oats
1 cup chopped pecans (optional)
1/2 cup vanilla protein powder
2 tbsp chia seeds
2 tsp cinnamon
Pinch of salt

Optional after baking
Banana chips

Instructions

  1. Preheat oven to 300°F and line a large baking sheet with parchment paper.
  2. In a large bowl, mix mashed bananas, maple syrup, coconut oil, and vanilla.
  3. Add oats, pecans, protein powder, chia seeds, cinnamon, and salt. Stir until fully coated.
  4. Spread evenly on the baking sheet.
  5. Bake 20 minutes, stir, then bake another 20–25 minutes until golden and dry.
  6. Turn off the oven, crack the door, and let granola sit inside 20–30 minutes to crisp.
  7. Cool completely and store in an airtight container.
