
Single Serve Monster Cookie

Ingredients
- 1/4 cup almond flour or oat flour1 tbsp coconut sugar or brown sugar1/2 tsp baking powderpinch of sea salt1/4 cup milk of choice3 tbsp almond butter or preferred nut or seed butter2 tbsp chocolate chips divided
- Optional Protein Addition
- Replace 1 tbsp of the flour with vanilla protein powder. Add 1 to 2 tsp additional milk to maintain a soft dough.
Instructions
- Preheat oven to 350°F if baking, BUT you can microwave!
- In a medium bowl, whisk together flour, sugar, baking powder, and sea salt.
- Add milk and nut or seed butter and stir until smooth.
- Fold in 1 tbsp of the chocolate chips.
- Transfer batter to a lightly greased ramekin or small baking dish and sprinkle remaining chocolate chips on top.
- Bake for 10 to 12 minutes until edges are set and center remains soft, or microwave for 60 to 75 seconds.
- Cool slightly, then divide into 2 servings.
