Nut Butter Protein Bars

One of my first gym recipes that I made and you all LOVED! Homemade Peanut Butter Protein Bars. Packed with wholesome ingredients and peanut butter cup flavor, but the best part…. a fantastic source of energy to keep you fueled throughout the day. So, let’s dive in!

 

 

 

The Power Ingredients:

  1. Oat Flour: The heart of these bars, oat flour, brings in a boost of fiber. Feel free to sub for rolled oats for subtle chewiness. It’s the perfect canvas to hold all the goodness together and a better alternative that AP Flour. Trust me it has it’s time to shine, but here is not it!
  2. Protein Powder: Choose your favorite protein powder to amp up the protein content. I recommend a vanilla or chocolate-flavored powder for an extra layer of taste.
  3. Maple Syrup: Sweet, natural, and oh-so-delicious, maple syrup not only adds sweetness but also provides a rich, complex flavor that complements the other ingredients perfectly.
  4. Peanut Butter: Ah, the star of the show! Opt for natural peanut butter for best results. I make these with natural almond butter for a subtle nuttiness option.
  5. Vanilla Extract: A touch of vanilla extract adds a warm and inviting aroma to the bars.
  6. Salt: A pinch of salt is the secret ingredient that balances the sweetness and enhances all the flavors. Don’t skip it!
  7. Dark Chocolate Chips and Coconut Oil: The dreamy combination of dark chocolate and coconut oil creates a luscious topping that takes these bars to the next level. If you don’t like dark chocolate go for a chocolate of your choosing. It’s chocolate – you can’t go wrong!

 

 

Tips and Tricks for Perfection:

  1. Mixing Matters: When combining the ingredients, take your time to ensure everything is evenly distributed. This step sets the foundation for the texture and taste of your bars.
  2. Press, Don’t Stress: When pressing the mixture into the pan, use the back of a spoon/measuring cup or your hands to create a compact and even layer. This ensures that each bite is a delightful harmony of flavors.
  3. Melted Chocolate Magic: Melting chocolate and coconut oil together might just be the most satisfying part of the process. Stir consistently to achieve a smooth and glossy chocolate topping.
  4. Chill Time: Patience is a virtue, especially when it comes to letting these bars set in the fridge. Allow them to chill for at least 30 minutes before slicing into delectable squares.

 

 

Alternative Toppings and Nut Butters:

  1. Toppings Galore: Get creative with toppings! Sprinkle crushed nuts, shredded coconut, or even a drizzle of almond butter on top before chilling for added texture and flavor.
  2. Nut Butter Swap: While peanut butter is a classic choice, don’t hesitate to experiment with almond butter, cashew butter, or even a mixed nut butter for a unique twist.

Nut Butter Protein Bars

Prep Time 10 minutes

Ingredients

  • 1 cup oat flour
  • 3/4 cup protein powder reduce to 1/2 cup if using no-stir peanut butter
  • 1/2 cup maple syrup
  • 1 cup natural peanut butter can use any nut butter of choice
  • 1 tsp vanilla extract
  • pinch of salt
  • 1/3-1/2 cup chocolate chips
  • 1 tsp coconut oil
  • sea salt for topping

Instructions

  • In a large mixing bowl, combine the oat flour, protein powder, maple syrup, peanut butter, vanilla extract, and a pinch of salt. Stir the mixture until all the ingredients are well combined.
  • Line an 8x8 inch baking dish with parchment paper and grease it lightly. Transfer the mixture into the dish and press it down firmly to create an even layer.
  • In a small saucepan or using a double boiler, melt the dark chocolate chips and coconut oil together over low heat. Stir continuously until the chocolate is smooth and well combined with the coconut oil.
  • Pour the melted chocolate over the pressed mixture in the baking dish, spreading it evenly with a spatula.
  • Sprinkle sea salt on top of the chocolate layer for added flavor.
  • Place the dish in the refrigerator for at least thirty minutes to allow the bars to set.
  • Once the bars are firm, remove them from the fridge and lift the parchment paper to easily transfer the slab onto a cutting board.
  • Cut the chilled mixture into bars of your desired size.
  • Serve and enjoy
