Instructions
- In a small bowl whisk the cornstarch with 2 tbsp cold milk until completely smooth. Set aside.
- In a small saucepan add the remaining milk cocoa powder sweetener vanilla and salt. Add the cornstarch slurry.
- Heat over medium low heat whisking constantly until the mixture thickens slightly and begins to steam. Do not boil.
- In a separate bowl whisk the protein powder with a few tablespoons of the warm cocoa to create a smooth slurry.
- Reduce heat to low and whisk the protein slurry into the saucepan until fully combined and creamy.
- Add peppermint extract if using, and stir for 1 to 2 minutes until heated through.
- Pour into a mug and add toppings if desired. Serve hot and thick.
