
Protein Pumpkin Pie Cookies
Ingredients
Cookies
- 1/2 cup pumpkin puree
- 2 tbsp coconut oil melted and cooled
- 1 egg
- 2 tbsp maple syrup
- 1 tsp vanilla
- 1/4 cup cane sugar or coconut sugar
- 1 1/2 cups almond flour packed
- 3 tbsp vanilla whey protein powder
- 2 tbsp coconut flour or oat flour
- 1 tbsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup chocolate chips optional
- 2 sheets graham crackers crushed
Yogurt Topping
- 1/2 cup plain nonfat Greek yogurt
- 1 tbsp maple syrup
- 1/2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- optional splash of almond milk to thin
Instructions
Cookies
- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Whisk pumpkin coconut oil egg maple syrup and vanilla until smooth.
- In a separate bowl mix sugar almond flour protein powder coconut flour pumpkin pie spice cinnamon baking soda and salt.
- Add dry ingredients to wet and fold gently until combined.
- Fold in chocolate chips if using.
- Scoop about 2 tbsp dough per cookie onto the baking sheet and flatten slightly.
- Top with crushed graham crackers and press gently.
- Bake 10 minutes.
- Cool on the sheet 2 minutes then transfer to a rack and let cool fully before topping.
Yogurt Topping
- Mix Greek yogurt maple syrup pumpkin pie spice and cinnamon until smooth.
- Add a small splash of almond milk if needed to reach drizzle consistency.
