Protein Pumpkin Pie Cookies

Ingredients
  

Cookies

  • 1/2 cup pumpkin puree
  • 2 tbsp coconut oil melted and cooled
  • 1 egg
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 cup cane sugar or coconut sugar
  • 1 1/2 cups almond flour packed
  • 3 tbsp vanilla whey protein powder
  • 2 tbsp coconut flour or oat flour
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chocolate chips optional
  • 2 sheets graham crackers crushed

Yogurt Topping

  • 1/2 cup plain nonfat Greek yogurt
  • 1 tbsp maple syrup
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • optional splash of almond milk to thin

Instructions
 

Cookies

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • Whisk pumpkin coconut oil egg maple syrup and vanilla until smooth.
  • In a separate bowl mix sugar almond flour protein powder coconut flour pumpkin pie spice cinnamon baking soda and salt.
  • Add dry ingredients to wet and fold gently until combined.
  • Fold in chocolate chips if using.
  • Scoop about 2 tbsp dough per cookie onto the baking sheet and flatten slightly.
  • Top with crushed graham crackers and press gently.
  • Bake 10 minutes.
  • Cool on the sheet 2 minutes then transfer to a rack and let cool fully before topping.

Yogurt Topping

  • Mix Greek yogurt maple syrup pumpkin pie spice and cinnamon until smooth.
  • Add a small splash of almond milk if needed to reach drizzle consistency.
