Protein White Mac and Cheese

Protein White Mac and Cheese

Ingredients

2 cups high protein pasta, dry
1 cup low fat cottage cheese
1 cup milk
1 cup part skim mozzarella shredded
1 half cup parmesan freshly grated
1 tablespoon butter or olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste

Optional:
1 scoop unflavored protein powder
1 teaspoon Dijon mustard
Pinch of nutmeg

Instructions

  1. Cook pasta according to package directions. Reserve one quarter cup pasta water then drain.

  2. Blend cottage cheese and milk until completely smooth.

  3. In a saucepan over medium low heat melt butter or oil.

  4. Add blended sauce and heat gently stirring often.

  5. Stir in mozzarella, parmesan, garlic powder, onion powder, salt and pepper until smooth and creamy.

  6. Add cooked pasta and loosen with reserved pasta water as needed.

  7. Optional whisk in protein powder until fully incorporated.

  8. Serve hot and with cheese on top if desired!
