Protein Chocolate Chip Cookie Skillet

Ingredients
- 2 eggs
- ½ cup coconut sugar
- ½ cup almond butter
- 1 tsp vanilla extract
- 1/2 cup almond flour
- ½ tsp baking soda
- ½ tsp salt
- ½ cup chocolate chips plus extra for topping
- Flaky salt for sprinkling
- Coconut oil or nonstick spray for greasing
- 1 scoop protein about 25–30 g vanilla or chocolate protein powder
Instructions
- Preheat oven to 350°F. Grease an 8-inch skillet.
- In a large bowl, whisk eggs and coconut sugar until smooth.
- Whisk in almond butter and vanilla.
- In a small bowl, combine almond flour (adjusted per above), baking soda, salt, and protein powder (if using).
- Add dry to wet and mix until a thick batter forms.
- Fold in chocolate chips.
- Spread batter evenly in skillet. Top with extra chips.
- Bake 25–30 min — shorter for gooey, longer for firm.
- Cool 10 min, then sprinkle with flaky salt.
