Protein French Style Hot Cocoa

Ingredients
1 cup milk of choice
1 scoop chocolate protein powder
1 tbsp unsweetened cocoa powder
1 tsp cornstarch
2 tbsp cold milk taken from the 1 cup
1 to 2 tbsp sweetener of choice such as maple syrup honey or stevia
1/4 tsp peppermint extract adjusted to taste (optional)
1 half tsp vanilla extract optional but recommended
Pinch of sea salt
Optional toppings: whipped cream, dark chocolate shavings, crushed peppermint

Instructions

  1. In a small bowl whisk the cornstarch with 2 tbsp cold milk until completely smooth. Set aside.

  2. In a small saucepan add the remaining milk cocoa powder sweetener vanilla and salt. Add the cornstarch slurry.

  3. Heat over medium low heat whisking constantly until the mixture thickens slightly and begins to steam. Do not boil.

  4. In a separate bowl whisk the protein powder with a few tablespoons of the warm cocoa to create a smooth slurry.

  5. Reduce heat to low and whisk the protein slurry into the saucepan until fully combined and creamy.

  6. Add peppermint extract if using, and stir for 1 to 2 minutes until heated through.

  7. Pour into a mug and add toppings if desired. Serve hot and thick.

Texture Tip
The cocoa should coat the back of a spoon. It will continue to thicken slightly as it cools.
