Cookie Monster Ice Cream

Cookie Monster Protein Ice Cream (Ninja Creami)

Prep: 5 min | Freeze: 24 hours | Servings: 1 pint | 40g protein

 

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup milk of choice
  • 1 scoop vanilla protein powder
  • 1 tsp blue spirulina
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup

Instructions

  1. Blend all ingredients until completely smooth. No lumps.
  2. Pour into your Ninja Creami pint container. Do not fill above the max fill line.
  3. Freeze flat for a full 24 hours.
  4. Run on the Lite Ice Cream setting.
  5. If crumbly, add 1-2 tbsp milk and re-spin.
  6. Top with protein cookie dough bites and dark chocolate chunks.

 

Protein Cookie Dough Bites (makes 8)

  • 1/2 cup almond flour
  • 1 scoop vanilla protein powder
  • 1/4 cup almond butter
  • 3 tbsp maple syrup
  • 1 tbsp milk (to bind)
  • 1/4 cup dark chocolate chunks, plus more for topping
  • Pinch of sea salt

 

 

Instructions

Cookie Dough Bites:

  1. Combine almond flour, protein powder, and sea salt in a bowl.
  2. Add almond butter and maple syrup. Mix until a dough forms.
  3. Add milk one tablespoon at a time until the dough rolls without cracking.
  4. Fold in chocolate chunks.
  5. Roll into 8 equal balls. Refrigerate until ready to serve.
